Healthy Collagen Paleo Pancakes

This delicious recipe serves one, double up if you are making it for two people.
Bananas are a great source of potassium and eggs are a great source of B vitamins, adding in clean collagen powder gives an amino acid boost.
Ingredients
2 Eggs
1 large ripe banana
1 tablespoon collagen powder
1 teaspoon cinamon (optional)
1 tablespoon coconut oil
for the filling
2 tablespoons natural yogurt
1/2 teaspoon liquid stevia
crunchy peanut butter, blueberries, strawberries, figs, maple syrup (optional)
Directions
1. Whisk the eggs in a bowl and mash in the banana, combine until desired consistency is aquired.
2. Stir in the collagen powder and cinamon if using
3. Heat up a frying pan or skillet with a tablespoon of coconut oil
4. Pour in the mixture, turn down to moderate heat and cook for 3 - 4 minutes.
5. Once browned flip the pancake with a large flipper spatula
for the filling
Mix some yogurt with liquid stevia and throw on toppings of choice & serve whilst warm!
